It’s almost officially summer, which means all I want are easy summer dinner recipes that are super-quick to whip up. When I have an abundance of basil and cherry tomatoes in my garden, I love eating summer salads for dinner. But sometimes I want something a bit more substantial, so when I came across Faith Durand’s recipe for her gnocchi skillet with chicken sausage & tomatoes, I made it immediately. (Bonus: I already had all the ingredients on hand. Big win for me.)

What Makes This Gnocchi Skillet with Chicken Sausage & Tomatoes So Good

With just four key ingredients — gnocchi, chicken sausage, cherry tomatoes, and fresh basil — this easy dinner came together so quickly. I used my favorite artichoke & garlic smoked chicken sausage here, but you could use any variety of cooked chicken sausages (you could try it with cooked bratwurst or kielbasa sausage, too!). 

I cooked and drained the gnocchi, which only took a few minutes. After browning the chicken sausages in a cast iron skillet over medium heat, I pushed them into a pile at the edge of the skillet. Then I turned the heat up to high to char the tomatoes a bit, until they were blistered but still held their shape. I quickly stirred in the gnocchi, removed the skillet from the heat, then stirred in the basil. Bam, dinner is served! I had some grated Parmesan cheese in the fridge, so I sprinkled a bit on top and it was absolutely delicious. 

Simple, quick, and easy — this is my new favorite weeknight dinner that I’ve already made several times since (it’s top-rated for good reason!).
