A Quick and Easy 4-Ingredient Meal from Trader Joe’s

I love an easy hash topped with a runny egg. Not only is it a quick and easy meal, but it is also customizable depending on what ingredients you happen to have on hand. Hash is a great way to use up leftovers, so if you have leftover veggies taking up space in your refrigerator, swap those instead of the frozen ones. Same thing with the protein.

It’s perfect for a weekend breakfast or brunch, or as a quick and easy dinner any night of the week.

What You’ll Need from Trader Joe’s

  • 1.5 pound bag Trader Joe’s Mini Medley potatoes
  • 12.8 ounce package Smoked Andouille Chicken Sausage
  • 14 ounce bag Trader Joe’s Fire Roasted Bell Peppers and Onions
  • Half dozen large eggs

How to Make This Easy Andouille and Potato Hash

Step 1: Start by cutting the Mini Medley potatoes into halves or quarters, depending on the size of the potato. Heat 2 tablespoons of oil in a large skillet and sauté the potatoes until golden brown. Season with salt and pepper as desired. This will take about 15 minutes. While the potatoes are cooking, this is a good time to open the package of Smoked Andouille Chicken Sausage and slice into rounds, about 1/4 inch thick. Then, just set them aside until you are ready to add them to the pan later.

Step 2: Push the potatoes to one side of the pan and add the bag of frozen Fire Roasted Bell Peppers and Onions. Cook for 2-3 minutes, stirring throughout. Once again, you can taste for seasoning and see if it needs any more salt and pepper.

Step 3: Once the peppers and onions are heated through, add the sliced andouille sausage to the pan. Cook until the sausage is warmed through, about 5 minutes. Transfer the andouille and potato hash to serving plates.

Step 4: Add a little more oil to the pan and fry the eggs to your desired level of doneness and place on top of the hash on the serving plates. (I love a nice runny egg on top of my hash!) You can finish off the dish with a few twists of black pepper and a pinch of salt just before serving.  Enjoy immediately. Serves 6.

Why I Love This Recipe

This hash is just spicy enough to perk up your taste buds without being overwhelming. I love the Trader Joe’s Smoked Andouille Chicken Sausage, but you can use leftover ham, pork, or beef as well. Plus, you can add just about any seasoning you like to make it your own. The key really is the perfectly browned potatoes with an egg on top. That’s why whenever I am at Trader Joe’s I always pick up a bag of the Mini Medley potatoes. I love the colors and they are great to have on hand in your pantry to jazz up a recipe or serve as a colorful side dish. I also love that there’s not a lot of prep work or chopping here. The bag of Trader Joe’s Fire Roasted Bell Peppers and Onions does most of the heavy lifting and you won’t be left teary-eyed from chopping up an onion!
