I often turn to Trader Joe’s for quick weeknight dinners, from Easy Sausage Casserole to Steak with Tomato and Ajika Pan Sauce. My latest quick Trader Joe’s meal ready in 15 minutes! is Pork Chops with Corn Salsa, and it’s a big winner around my house. This meal is so full of flavor you would never guess it is so easy to prepare. Plus, it uses two of my favorite Trader Joe’s products that I always keep on hand.

What You’ll Need from Trader Joe’s

On a busy weeknight, swing by Trader Joe’s on your way home and pick up these four ingredients:

  • 2 pounds Frenched, Bone-In, Center-Cut Pork Loin Chops (4 chops total, 2 packages)
  • 16-ounce bag Frozen Roasted Corn
  • 12-ounce jar Hatch Valley Salsa
  • 2.5-ounce bag fresh cilantro

How to Make Trader Joe’s Pork Chops with Corn Salsa

Step 1:  Season the pork chops with salt and pepper. Add oil to a large skillet over medium-high heat and cook for 3 minutes on each side, or until the pork chops are golden brown and have reached an internal temperature of 145°F.  Set the pork chops aside on a plate and tent with foil while making the salsa.

Step 2: In the same skillet, add the bag of frozen Roasted Corn. Then add the whole jar of the Hatch Valley Salsa. Stir and heat until warmed through, about 5 minutes.

Step 3: Spoon the warm corn salsa over the pork chops and garnish with snipped fresh cilantro. Enjoy immediately. Serves 4.

Why I Love This Recipe

You can’t go wrong with a one skillet meal that is ready to serve in less than 15 minutes. Since I always keep a bag of Trader Joe’s roasted corn in my freezer and a jar of the Hatch Valley salsa in my pantry, this recipe is a dinnertime staple. I love how the char on the roasted corn elevates a simple frozen vegetable to a new level. Plus, I find the unique flavor and subtle heat of the hatch chile salsa to be simply irresistible. This easy corn topping heats on the stove so quickly, it’s the perfect amount of time to let your pork chops rest a little bit before serving. It’s a huge hit in our house, so I encourage you to give it a try in yours!
