The allure of a slow cooker meal is pretty undeniable: You layer some ingredients into your Crock-Pot, choose a heat setting, set a timer for how long it needs to cook, and come back later to a meal that’s ready and waiting for you. (Bonus: Your home will also smell amazing.)
Busy parents know that the slow cooker is such a useful tool for getting dinner on the table with as little fuss as possible. And while this kitchen appliance is handy all year round, it really shines in winter, as it’s well-suited to recipes that benefit from low and slow cooking like pot roast and chili mac and cheese — hearty meals that will keep the whole family satisfied until the first thaw in spring.
Tips for Preparing Slow Cooker Meals
- Never fill the slow cooker more than 3/4 full. The recipes shared on our sister site The Kitchn are designed to get these proportions right so foods braise or simmer (versus boil or burn).
- Always thaw frozen meat before adding it to the slow cooker. According to The Kitchn, “Because slow cookers operate at a lower temperature, food is likely to be in the temperature danger zone (temperature range between 40 and 140°F) for too long when starting with frozen meat, which increases the risk of harmful bacteria.”
- Always preheat your slow cooker. Doing this one simple step can save you 15 to 20 minutes of extra cooking time. Turn your empty slow cooker onto the highest heat setting for about 10 minutes while you prep the ingredients, and then turn it down to the appropriate temperature called for in the recipe when you put all of your ingredients in.
- Add your dairy items at the end of cooking. If you add milk, cheese, or sour cream too soon, you run the risk of it curdling. You should also wait until the end to add fresh herbs, so they don’t lose their brightness.
- Don’t lift the lid (unless the recipe explicitly tells you to do so). Every time you open the slow cooker, you lose precious heat that takes time to build back up.
