A slow cooker is a kitchen essential — especially when your time is limited by the demands of little ones. (If you ask me, expecting parents should just go ahead and add one to the baby registry!)

The best slow cooker soup recipes are dinnertime saviors on many levels. They offer a nourishing, hearty meal you can serve in just one bowl (who needs the extra dishes?) while typically requiring minimal preparation — and absolutely no babysitting the pot.

Can you prep slow cooker meals ahead of time? 

There are tons of meal prep hacks that can help you save even more time than your Crock-Pot or slow cooker already does. Some of the tips found in these recipes include the following: 

  • Chop your vegetables ahead of time and save them for two to three days in the fridge. 
  • Bake toppings like homemade croutons up to two days in advance. 
  • Make pre-cooked items like roasted mushrooms up to two days ahead.
  • Prep an entire batch of stew the day before you plan to eat it; the flavors only get better by the second day.  

Can you freeze slow cooker soups? 

Most of the soups on this list can be saved in the fridge for four to five days, or frozen for two to three months. You can pour cooled soups into freezer-safe plastic bags and lay them flat to maximize space (don’t forget to label!).
