I Made Simone Biles’ Favorite “S’mores Cookies,” and It’s the Most Delicious Upgrade for Store-Bought Cookie Dough
Although there’s been a lot of talk about the delicious chocolate muffins at the Olympic Village in Paris this summer, there’s only one treat on Simone Biles’ mind right now: s’mores cookies. In an interview with Women’s Health, the gold-medal gymnast shared one of her favorite desserts at home, and we totally get it. Her favorite dessert sounds that good.
While her usual go-to sweet treat at the end of the day is strawberries with whipped cream, the Olympian said in her interview that she also loves to make her favorite recipe for s’mores cookies. The best part? They only require four simple ingredients: cookie dough, graham crackers, marshmallows, and bars of chocolate.
So of course, after watching her inspiring performance at the Olympic Games Paris 2024, I had to try the dessert of champions from the GOAT herself.

How to Make Simone Biles’ Favorite S’mores Cookies
Preheat the oven to 375°F.
With clean hands, press cookie dough (whether it’s store-bought or homemade chocolate chip cookie dough) into a thin disk, about 1/4 cup of dough. In the center, place a graham cracker, a piece of chocolate, and a marshmallow. Close the dough around the surface area of the s’mores ingredients so they are completely covered, then place on a lined baking sheet. Make sure to give the cookies plenty of room; they will spread!
Bake the cookies in the oven for 10 to 12 minutes, or until the edges are golden-brown. Remove from the oven, then let the cookies sit on the baking sheet for another 10 minutes before removing to a cooling rack.
My Honest Review
I’m not kidding — these are some of the best cookies I’ve ever had. First, I like how simple they are to put together. I’m not the biggest baker in the world, so when I find a recipe that makes it simple (with pre-made ingredients) and tastes really good, I’m a fan. This dessert has everything I want in a s’mores cookie, with that crunchy graham and the melted chocolate and marshmallow.
I’m also more of a chewy cookie kind of person, and these cookies have the exact texture I’m looking for. Soft, chewy chocolate chip cookie with melted chocolate and marshmallow — you really can’t go wrong!
My one note is that these cookies are really big, which I don’t think is exactly a problem. The only issue is that they are really soft and chewy, so they don’t have the best structure in terms of picking them up and eating them. They are a great cookie to serve on a plate and break off into chunks — maybe even share them with someone else, given how big they are. I’m almost wondering if it would be just as good to make smaller cookies with mini marshmallows instead.
Tips for Making Simone Biles Favorite S’mores Cookies
- Stack the graham cracker on the bottom: Then the chocolate, then the marshmallow. Biles does a slightly different combination than this, but I found this to be the most successful for these cookies. That way the bottom still cooks evenly and you get that gooey marshmallow on top.
- Wrap the marshmallow tightly: While it is OK to have a little bit of it peeking out the top to get that s’mores cookie look, make sure the cookie dough is still wrapped up tightly on the sides. This prevents the marshmallow from pooling over the dough, which causes you to lose that cookie shape.
- Use a silicone baking mat: When I want a super-chewy cookie, I like to use a silicone baking mat because the bottom doesn’t overcook and it creates a softer, chewier texture. I recommend using one for this recipe, but if you don’t have one, opt for parchment paper.
