For the Best-Tasting Buttered Pasta, I Never Use Parmesan — This Has So Much More Flavor
Buttered noodles are one of those simple comforts I never get tired of, but this version is the delicious upgrade I keep coming back to. Adding lobster base turns an everyday pantry dinner into something that tastes a little special without making it complicated. The noodles stay simple and buttery, but the lobster base brings a savory richness that makes the whole dish feel “fancy.” It’s the kind of meal I make when I want something quick, but still a little indulgent, using ingredients I already have on hand.
Why Adding Lobster Base to Buttered Noodles Is So Great
Lobster base is one of my favorite secret weapons in the kitchen, and this is one of the easiest ways to use it. Just a teaspoon adds a touch of seafood flavor without overpowering the noodles. It melts into the pasta water, and when combined with butter, creates a glossy sauce that tastes rich and savory. I love that it gives buttered noodles a restaurant-style flair while keeping the ingredient list short. It’s proof that a small tweak can completely change a simple dish!
How to Make Buttered Noodles with Lobster Base
- Cook the pasta. Add 1/2 pound of dried pasta to boiling water and cook for 1 minute less than the package instruction for al dente. Reserve 1/2 cup of the pasta water, then drain.
- Flavor the pasta water. Whisk 1 teaspoon of lobster base into the reserved pasta water.
- Cook the garlic. Melt 1 tablespoon unsalted butter in a skillet over medium heat. Add 2 minced garlic cloves and cook until fragrant, about 1 minute.
- Toss and finish. Add the pasta and lobster pasta water, tossing to coat. Turn off the heat and stir in 2 tablespoons of unsalted butter until melted. Season with kosher salt to taste. Garnish with thinly sliced chives and freshly cracked black pepper, if desired.
If You’re Making Buttered Noodles with Lobster Base, a Few Tips
- Bulk it up: These noodles are great with sautéed shrimp or seared scallops for a quick weeknight dinner.
- More ways to use lobster base: This versatile ingredient is perfect for lobster bisque, decadent lobster mac and cheese, and creamy lobster risotto. I also like to stir it into shrimp fried rice or seafood gumbo for a boost of seafood flavor. Remember: Lobster base is concentrated, so a little goes a long way!
