A good casserole has an undeniable appeal. They’re easy to prepare, affordable, and comforting, and they use common pantry ingredients. But they’re particularly perfect for busy parents and caregivers who are looking for meals that feed a crowd. For my family of four, casseroles are always part of the meal plan, whether it’s our go-to chicken divan, a super-satisfying cheeseburger casserole, or my husband’s favorite, tuna noodle casserole. Easy Spanish Tortilla Casserole

Inspired by the traditional tortilla Espanola — basically a fried potato omelette — this casserole-ized version is a bit easier to prepare (no flipping!) and just as satisfying.
