A good casserole has an undeniable appeal: It’s easy to prepare, comforting, and uses common (and usually affordable) pantry ingredients. Casserole recipes are particularly perfect for busy parents and caregivers who are looking for meals that can feed a crowd. For my family of four, they’re are always part of the meal plan, whether it’s our go-to chicken divan, a super-satisfying cheeseburger casserole, or my husband’s favorite, tuna noodle casserole.

Most of the recipes here require between 15 and 20 minutes of prep time — with some needing as little as 5 or 12 minutes — before popping your casserole into the oven. So when you want to spend less time tending to the stove without sacrificing flavor, here are 18 easy casserole recipes to make dinnertime a little easier.

Quite possibly the best thing you can do with a half-dozen zucchini, this casserole has a kid-friendly, crunchy-cheesy crust that gives way to a creamy, tender filling of fresh grated zucchini. It’s a gateway casserole for anyone who’s on the fence about summer’s most abundant vegetable. (Substitution note: This recipe includes Dijon mustard, which contains trace alcohol. Yellow mustard is an acceptable alcohol-free substitute.)

Chicken and Rice Casserole

A classic, for good reason. Chicken and rice casserole is a cozy, comforting dish that far exceeds the sum of its parts. In this case, those parts include a bag of frozen vegetables; boneless, skinless chicken thighs; and a quick homemade cream-of-chicken soup. After baking for an hour and getting topped with a handful of cheese, this homey meal is good to go.

Easy Spanish Tortilla Casserole

Inspired by the traditional tortilla Espanola — basically a fried potato omelette — this casserole-ized version is a bit easier to prepare (no flipping!) and just as satisfying. I like to use this as the centerpiece for a tapas-themed dinner with jamón Ibérico, marinated red peppers, Spanish cheeses and olives, and other little bites that the kids can choose (or not) for themselves.

Cheeseburger Casserole

In terms of crowd-pleasers, this one’s got a lot going for it — only 5 minutes of prep time, relatively affordable ingredients, and, oh yeah, it tastes like a cheeseburger. Christine Gallary channeled the Hamburger Helper vibes of her youth to create this kid-friendly casserole that answers the question, “What should I make with a pound of ground beef?”

Leftover Chili Baked Potato Casserole

I don’t often find myself with leftover chili, as it’s one of the few dinners my whole family will reliably devour — but when I do, it goes straight into this magical baked-potato topped casserole. For anyone who grew up eating Wendy’s baked potatoes and chili, this will strike a chord. The recipe calls for starting with pre-baked potatoes. For that, I pop the spuds in the microwave for the first "bake" and then finish the casserole in the oven, as directed.

Ham and Potato Casserole

POV: You’re 10 years old. There’s a chill in the air, and the forecast is calling for snow. You just got home from a long day of school, and the house smells like comfort itself because Mom has made your favorite ham and potato casserole with the delicious bubbly cheese sauce, and you know that dinner is going to be amazing tonight. Life is good.

Chicken Divan

When I was growing up, we used to call chicken divan "chicken Alice" (said with a French accent) in honor of my mom because it was one of her go-to recipes. Maybe I should get my kids to start calling it "chicken Stéphanie" because I make it just as often. With its classic combination of creamy sauce, big pieces of broccoli, shredded chicken, and buttery cracker topping, it’s a dinner that deserves to be passed down from one generation to the next.

Stuffed Pepper Casserole

My kids love when I make stuffed peppers for dinner — especially in the summer when bell peppers are everywhere — but assembling them can be a bit tedious. Enter: this stuffed pepper casserole, which combines everything my family loves about stuffed peppers — tender bell peppers, seasoned ground beef, and perfectly pilaf-y rice — in one much more convenient dish.

One-Pot Creamy Tuna Noodle Casserole

A holdover from 1950s convenience cooking, tuna noodle casserole holds a special place in my husband’s heart because it was one of the things his busy mom used to cook for him and his siblings. Now, my kids are developing their own affinity for the classic combination of creamy sauce, flaky tuna, and bouncy egg noodles. This modern take on the traditional casserole swaps the canned soup for a homemade sauce and adds parsley, fresh garlic, and mustard for extra levels of flavor. (You can swap the Dijon mustard for yellow mustard to avoid trace levels of alcohol.)

Million Dollar Chicken Casserole

This casserole might not make you a million bucks, but with four different types of dairy it is unequivocally rich. Cream cheese, sour cream, cottage cheese, and cream-of-chicken soup form the base for this chicken casserole, which is seasoned with garlic and onion powder, plus fresh scallions before getting topped with buttery Ritz cracker crumbs.

We could debate all day about whether or not shepherd’s pie is a casserole (it is, though), but instead let’s just agree that this combination of savory ground beef (or lamb), diced vegetables, and a fluffy mashed potato topping is exactly the kind of homey dish your kids will want to eat pretty much anytime.
