Few things can reliably get me out of bed in the mornings like a freshly baked batch of banana muffins can. Banana muffins are like a handheld version of banana bread, and they’re an easy crowd-pleaser that the whole family will love. I often have brown bananas on hand, and if I’m not using them for smoothies then I’m definitely putting them to use in this super-quick and easy banana muffin recipe. The best part is that these muffins only require one bowl and no mixer, so there’s minimal cleanup involved. Even if you’re low on time, you can whip these delicious bites up in no time. And trust me — they’re so worth it.

What Makes Easy Banana Muffins So Good

These banana muffins are so delicious. In fact, I brought some to the office recently and the plate was gone in under 5 minutes! They’re very easy to make, and the flavor more than punches above its weight. The muffins are incredibly moist and tender (and not overly dense), with a perfectly sweet banana flavor. The addition of brown sugar adds a touch more sweetness and depth of flavor, and gives them a slight caramel note. 

They’re perfect to have on hand during weekday mornings when you’re rushing out the door, or for a quick midday snack. All you need to make them is a bowl, a whisk, and a spatula.

How to Make Easy Banana Muffins 

  1. Melt the butter. In a large bowl, melt the butter in the microwave. 
  2. Mash the bananas. In the same bowl, add your overripe bananas and mash them completely with a fork. 
  3. Add the wet ingredients. To your banana-butter mixture, whisk in the eggs, brown sugar, vanilla extract, and salt until fully combined. 
  4. Add the dry ingredients. Sprinkle baking soda over the batter, then add in the flour and stir with a spatula until there are no dry spots left. 
  5. Bake. Pour the batter into a prepared muffin tin, and bake at 350°F for 18-20 minutes.

If You’re Making Easy Banana Muffins, A Few Tips 

  • Make it dairy-free or vegan. This recipe is easily customizable, so you could swap out the butter for oil. I actually used a flax seed egg recently because I had just run out of eggs before making this recipe!
  • Add some mix-ins. Walnuts are my personal favorite, but chocolate chips would be great too.
