Trader Joe’s has dozens of delicious bakery items, and its mini sheet cakes are easily one of the most beloved. The quirky grocery store has come out with eight different flavors, including Strawberry, Yellow Cake, and Pumpkin Spice, and the latest is absolutely perfect for springtime celebrations. Shoppers are already calling the new Toasted Coconut Mini Sheet Cake a “100000/10.”
I absolutely LOVE coconut cake, and anything coconut-flavored in general, so I knew I had to see if I could snag one. A few days before a massive blizzard hit NYC, I bravely made my way to my local store — and so did everyone else in my area. (Thankfully, no fights broke out.) After glancing at other carts, it seems many other shoppers had the same idea — hunker down with one of these little cakes. After one bite, my winter blues quickly disappeared.
What You Should Know About Trader Joe’s Toasted Coconut Mini Sheet Cake
Trader Joe’s gave its classic mini sheet cake a tropical twist. The cake batter contains coconut milk and is studded with toasted coconut flakes throughout. The cream cheese frosting is also flavored with, you guessed it, toasted coconut.
Trader Joe’s Toasted Coconut Mini Sheet Cake is available for a limited time at stores nationwide from February through April. Each one is $5.99 and serves six (but that could be less depending on how generously you slice it).
My Honest Review of Trader Joe’s Toasted Coconut Mini Sheet Cake
Compared with other Trader Joe’s mini sheet cakes, this one is just as cute. The small size is ideal for get-togethers, a girls night in, or even just a blissful moment to yourself. But what really impressed me was the flavor — and TJ’s nailed it once again.
The cake is SUPER dense and moist, chock-full of coconut pieces, with a light coconut flavor. The frosting piped on top is sweet, but the cream cheese provides a bit of tang to balance it out. The toasted coconut flakes throughout the cake and in the frosting provide even more flavor and texture. It’s a heavenly bite. I also appreciated the frosting to cake ratio (I honestly could go for even less frosting).
As a coconut lover, I’d totally get it again and am already regretting not grabbing another — and a pint of mango or passion fruit ice cream — to really turn this historic snow day into a tropical getaway.
