When it comes to dessert, I’m all about instant gratification. And while I won’t say no to making a strawberry delight, whipping up a creamy mousse, or baking a chocolate cake, waiting is the hardest part. Plus, sometimes I like my dessert to be easy.

So imagine my excitement when The Kitchn’s food editor Patty dreamed up this Lemon Fluff. In less than 15 minutes — and with no “hidden” wait times — dessert is done and ready to eat too. Dreams really do come true.

What Makes Lemon Fluff So Good

In her recipe, Patty promises you can make this in minutes, and I can attest that it’s very much true. Trust me, I was a professional baker in my previous life. Besides maybe straight-up whipped cream and a mug cake, there’s not much else sweets-wise you can whip up in minutes and eat right away.

You will need two bowls, but the process is so quick and unfussy, you won’t mind. Just combine lemon pudding mix, heavy cream, and fresh lemon juice in one bowl, heavy cream, powdered sugar, salt, and Marshmallow Fluff in another, then mix those two together with a handful of crushed shortbread cookies for good measure (and crunch!). That’s it — dessert is served! This banger of a recipe is especially great if you have family or friends coming over at the last minute or are just in the mood for a little sweet something. 

How to Make Lemon Fluff

  1. Make the pudding mixture. Simply whisk together lemon pudding mix, heavy cream, and fresh lemon juice together, then let it sit for a few minutes to thicken.
  2. Make the marshmallow mixture. Beat heavy cream, powdered sugar, and salt together until soft peaks form. Add the Marshmallow Fluff and continue to beat until stiff peaks form. 
  3. Bring it together. Add the marshmallow mixture and crushed cookies to the pudding and gently fold until combined. Sprinkle with even more crushed cookies and dig in.

If You’re Making Lemon Fluff, a Few Tips

  • Mix up the cookie. While shortbread cookies are delicious, this no-bake dessert would be just as good with gingersnaps, Biscoff cookies, or Nilla wafers. 
  • Try it with Cool Whip instead. For even more of a shortcut, swap the heavy cream, powdered sugar, and salt in Step 2 with two cups of Cool Whip. Add the Marshmallow Fluff and continue with the recipe.
