If you see me rolling up to a bake sale with a pan in my hand, chances are there are brownies inside. Baking is definitely not my strongest cooking skill, but brownies are something I can manage, and the result is more than worth the effort. Everyone has their own idea of the perfect brownie. For me, it’s a chewy dark chocolate brownie with a shiny, crackly top — but I have room in my heart for cakey, fudgy, and gooey brownies too.

Here, I’ve rounded up some of the best easy brownie recipes from Cubby’s sister site The Kitchn, including a classic chewy brownie and one with a creamy peanut butter swirl, as well as some recipes with a few extra steps (they’re worth it!), like these triple-decker mint brownies. These brownies are all sure to make you the unofficial winner at the next school bake sale, no matter which recipe you choose (though obviously skip the nut-based ones if your school is nut-free!). 

A note on extracts: Extracts, like vanilla, peppermint, and almond, contain alcohol. If avoiding alcohol, look for an alcohol-free version. For vanilla, you can substitute vanilla bean, powder, or paste for extract.
