No-bake chocolate chip cookie delight has quickly become one of my all-time favorite desserts (and that’s coming from someone who cross-tests a lot of our dessert recipes!). It’s easy to put together, doesn’t require turning on the oven, and always gets the kind of reaction that makes you feel like some kind of dessert hero. I cross-tested this recipe last year, and I’ve already made it four more times since. Every time I bring it to a party, I swear someone asks for the recipe or asks me to make it again. It’s just that good.

What Makes No-Bake Chocolate Chip Cookie Delight So Good

This dessert has five layers but it comes together with minimal effort, thanks to a few smart shortcuts. Using store-bought crunchy chocolate chip cookies for the crust saves time and still delivers a rich, buttery cookie flavor. The crust holds together well without needing to be baked, and it’s firm enough to support the layers without getting soggy. The pudding adds a layer of chocolate flavor that pairs perfectly with the cookie base.

The cream cheese filling is where it gets really good. It’s fluffy, light, and packed with mini chocolate chips. A layer of homemade whipped cream goes over the top, and the whole thing is finished with a generous sprinkle of extra chocolate chips and crumbled cookies. It gives the dessert a showstopping look without any fussy decorating. It’s nostalgic and comforting, like a cookie icebox cake with extra flair.

2 Tips for Making No-Bake Chocolate Chip Cookie Delight 

  • Line the pan with two sheets of parchment paper. This is the key to getting clean slices! Position them perpendicular to each other so that the parchment hangs about 2 inches over all four sides of the pan to form a sling. When you’re ready to cut, grasp the excess parchment, lift the slab onto a cutting board, and cut into 12 pieces, wiping the knife between each cut.
  • Use crunchy cookies. Look for crunchy chocolate chip cookie brands (not soft or chewy) for a firm crust. We tested with Chips Ahoy and Famous Amos, and they both worked perfectly here.
