We eat a lot of macaroni and cheese in my house. From poolside servings of Kraft Easy Mac from our pool’s snack bar (trust me — mac and cheese hits just hits different after a few hours at the pool) to fancy French onion mac and cheese for special occasions, my family enjoys a steady stream of the gooey noodles. One of the great things about the dish is its versatility. By tweaking the method and ingredients slightly, you can enjoy a different kind of mac for every craving.

I’ve rounded up 15 of the best mac and cheese recipes from Cubby’s sister site The Kitchn, including traditional versions that hit that classic note, fresher formats (hello, mac and cheese muffins!), and baked versions to feed a crowd. There’s an option for every kind of macaroni and cheese lover on this list.

Skillet Mac and Cheese

This skillet mac and cheese comes together in one pan (not counting the pot for boiling pasta), and baking the mac in a cast iron skillet gives the dish an entire perimeter of delicious crispy edges. (Use yellow mustard instead of Dijon to avoid trace alcohol.)

French Onion Mac and Cheese Recipe

Although this recipe calls for wine, as the developer of this recipe I can tell you that it’s OK to skip it; just use more beef broth and a splash of vinegar. The French onion flavor will still come through to combine the best parts of mac and cheese and French onion soup.

Taco Mac and Cheese Recipe

This ingenious recipe combines the best of two kid-approved dinners: mac and cheese and tacos. My kids love customizing their bowls with their favorite mix of toppings, like sour cream, salsa, and tortilla chips. Use a mild enchilada sauce to keep the heat level in check.
